Do you ever sit at home wishing you were on vacation on a tropical island? While I can’t instantly transport you to Jamaica (man I wish that was a thing!) I can give you this delicious strawberry daiquiri recipe to whip up! Just close your eyes, take a sip and you’ll instantly be transported into vaca-mode!

Growing up, it was a real treat when my parents would let me order a strawberry daiquiri at a restaurant. (A non alcoholic one, of course!) Now that I’m a grown up, I get to enjoy the same delicious drink, with booze!

For this daiquiri recipe, I added my own little spin with basil simple syrup. Simple syrup is easy to make by boiling a combination of half water and half sugar together until the sugar dissolves.

I love to make flavored simple syrup’s to add to co*cktails. It’s as easy as adding an herb, vegetable or fruit to the simple syrup while it’s boiling. Strain the simple syrup at the end, then add it to your favorite co*cktail.

I’ve made grilled jalapeno simple syrup to go in a Watermelon Margarita, it’s sweet, spicy and so delicious! I’ve also made mint simple syrup to add to this Frozen Coconut Mojito. So refreshing in a co*cktail with that minty, fresh flavor!

The basil simple syrup in this co*cktail adds just a hint of basil to this sweet strawberry daiquiri. After you whip up the simple syrup, all you have to do is toss all of the ingredients in a blender. Blend until smooth and the co*cktail is ready for sipping!

What is in a strawberry daiquiri?

  • Strawberries – fresh or frozen will both work!
  • Rum – I like to use a white rum, but a dark rum can also be used. Or leave out the rum to make a virgin daiquiri.
  • Lime juice – fresh squeezed!
  • Ice – to get that perfect slushy consistency, you’ll need plenty of ice.
  • Simple syrup – feel free to use traditional simple syrup, just sugar and water. Or try my basil simple syrup for a fun spin on the co*cktail!

How to make simple syrup

Add equal parts sugar and water to a saucepan on the stove over high heat. For this strawberry daiquiri recipe, I use 1/2 cup sugar and 1/2 cup water to make approximately 3/4 cups simple syrup. Bring the syrup to a boil and stir until all of the sugar has been dissolved, approximately 2-3 minutes.

If you’d like to add a flavor to your simple syrup, like mint, basil or jalapeno, add these ingredients with the sugar and water. Allow them to boil with the syrup. After all of the sugar has dissolved into the water, use a mesh strainer to strain out the other ingredients. Let the simple syrup cool before adding it to a co*cktail.

How long can you keep simple syrup?

Simple syrup will last up to one month in the refrigerator. Make some extra to keep on hand for co*cktails every weekend!

Last summer I made a ton of roasted jalapeno simple syrup because I loved the combination of sweet and spicy. I kept it in the refrigerator and I’d whip it out whenever friends came over to hang by the pool.

They were always really impressed with my “fancy” homemade syrup! Just don’t tell them how easy it is to make. We’ll keep that our little secret!

How to make a strawberry daiquiri

Once the simple syrup is prepared, it’s time to make the daiquiri!

Add simple syrup, strawberries, rum, lime juice and ice to a blender or food processor. Blend until smooth.

If using frozen strawberries, you’ll need to use less ice than if using fresh strawberries. I like to start with 2 cups of ice cubes, then add more, if necessary, until I reach the desired consistency.

Basil Simple Syrup

Strawberry Daiquiri

  • ¾ cup basil simple syrup, recipe below
  • 4 cups strawberries, fresh or frozen
  • ¾ cup white rum
  • ½ cup lime juice, fresh squeezed
  • 2-4 cups ice cubes

Instructions

Basil Simple Syrup

  • Add the sugar, water and basil to a small saucepan on the stove over high heat. Bring to a boil, stir constantly until all of the sugar has been dissolved, 2-3 minutes.

  • Remove from the heat and strain out the basil with a mesh strainer. Allow to cool in the refrigerator for 15-20 minutes.

Basil Berry Daiquiri

  • Once the simple syrup has cooled, add it to a blender with the strawberries, rum, lime juice and ice.

  • Blend until smooth and serve immediately.

Notes

  • Basic simple syrup, made without the basil, can be used for a more traditional strawberry daiquiri. Simple syrup can be purchased at the grocery store on the aisle with the co*cktail mixers or made at home following the recipe provided, simply omitting the fresh basil.
  • Less ice will be needed if using frozen strawberries, than if using fresh strawberries. I like to start with 2 cups of ice cubes, then add more, if needed, until the daiquiri reaches the desired consistency.
  • To make a virgin daiquiri, omit the rum.
